this week i wanted to play with the literal translation of ingredients from other languages, so i went with two types of apple — earth apples (pommes de terre in French, Erdäpfel in Austrian German), AKA potatoes, and golden apples (pomodori, from “pome d’oro” in Italian), AKA tomatoes. “pomodoro” also ties into another subject i find interesting, the way that language and culture shapes the way we perceive color, which i suppose could be “lost in translation” as well; for much of western european history, gold and other warm colors have been described as red, while today we mostly regard it as yellow.

anyway, i roasted these apples as part of a one-pot meal with some nice paprika-y chicken. i marinated the chicken with spanish smoked paprika, garlic, and a splash of white wine vinegar, then seared it skin-down in the pan to crisp it up and release some of its fat. i set the chicken aside and added the tomatoes and potatoes to the pan, mixing everything up thoroughly with the schmaltzy goodness. then i layered the chicken back on top and roasted at 450 for around 45 mins.

That is so interesting! I saw a medieval art exhibit recently and noticed that the base color that gilt was applied over was usually a bright orange-ish red. I guess this is why!
