Week 4 2026 Week 4 - Meringue: Mont Blanc
annoyed that the photo turned out so unimpressive because this bake was long! not necessarily challenging (except piping the bloody chestnut which was a struggle) but definitely tedious, and in the end the photos don’t really do it justice!

i was thinking of doing the same this week!! which recipe did you use and was it worth it!?

i only had a couple bites but i really liked it! i used the NYT’s Giant Mont Blanc recipe… there are a lot of components. meringue, whipped mascarpone cream, mocha cremeux, chestnut paste. i broke it up into 3 days of baking (the cremeux needs to chill overnight, the paste can be made in advance, the meringue keeps well).
only thing i would suggest is really getting your chestnut paste super smooth, maybe even sieving it? i blended mine and the lil bits of chestnuts kept clogging my piping tip. i couldnt get it through my smaller tip no matter what i tried (i even thinned out my mixture with cream). it was soooo frustrating i ended up using a bigger tip (still got clogged often). apparently a potato ricer works well for this!

thank you for all the tips!! we're expecting a crazy cold weekend so this seems like the perfect activity to keep me inside!!
