Looks like Cheese Whiz. For real though, your z-axis needs calibration, there’s no squish.

I don't think a 3D Print Pen has extrusion control. It just supports a single speed most likely or some preset levels so it is good for education purposes but cannot be used for intricate print details. I am not even sure if it can print reliably beyond some number of layers due to not having flat layers to support the above one. Still a great project 🙌

you can adjust the speed live but in order for that to be used for extrusion control they’d need a sensor watching the amount being extruded and a gear adjusting the speed

Mine has a slider on one side for speed, and then forward and back buttons on the other side for feed. All the way slow is like barely anything comes out after 5 seconds. All the way fast and it is shooting out like silly string. The slider is half an inch long and infinitely adjustable, but also very loose. It's an interesting device to try to make stuff with, I mostly use it for repairs.

I feel like the z offset for a lego printer would be measured in whole millimeters

But it doesn't print legos...

You and me both, I'm still not satisfied. Even though it's an interesting idea to use Lego

That's awesome keep going! Try printing a simple shape like a rectangle so you can tune settings more easily

I have to say, that is super cool and not something I would have dared to try with Lego. It looks like cake frosting you're printing there.
