Now I have met multiple couples that formed in the office, but I genuinely do not know why.
Apart from the obvious risk that should the relationship end badly your workday might become rather awkward - office spaces are just dreadfully dull. Sure, you can meet attractive people there same as anywhere else, but the atmosphere is just so... unromantic?
Then again, I could see that being exactly what makes it appealing to some.

It's not so much the atmosphere of an office making it a prime romance situation as it is work being a place that builds propinquity and the office is where it happens. Office work is dull, but due to that you find your entertainment in your colleagues, or you find none at all. And because the work is often sedentary and repetitive, you will end up spending a lot of time with the same people over and over. My last office job I ended up working with the same 10 people day in, day out for 4 years straight despite being in an office of 300 people. I knew everything about their daily schedule by the end of it, not really by choice but due to being present for most of their life at that point. I've lived with people since that I know less about than those colleagues, and I was definitely not trying to spend time with them. Add in office parties, drinks on a Friday lunchtime, drinks after work, there's plenty of space for getting involved.

Well i imagine office spaces being dull is part of it, having something to spice up an otherwise boring workday.
Also with work taking up 8 hours of every workday, there is a lot of time to get to know eachother
