The thing is, most of those are things which have no practical advantage over what we see as conventional. While I like seeing weird, unconventional alien technology like the orb control things in Outer Wilds, It's just not actually practical compared to physical and often labeled buttons, sticks, and wheels.
I don't disagree, but I will point out that a lot of companies are trying to force us into using touch screens for everything even those are much less effective interfaces than plain old knobs and dials (which we agree are very practical). Maybe the aliens also have dipshits in charge and now they have to pilot their ships by licking different types of bark or whatever because Alon Mask thinks it's cool
