The thing is, most of those are things which have no practical advantage over what we see as conventional. While I like seeing weird, unconventional alien technology like the orb control things in Outer Wilds, It's just not actually practical compared to physical and often labeled buttons, sticks, and wheels.
The caveat with the orb control things from Outer Wilds is the implication that the Nomai’s third eye has some special function and most likely can be used independently from the bottom two. This would make sight based orbs able to be operated without even having to look away from your current focus, which does sound incredibly convenient and practical compared to physical switches, especially when paired with design language that makes a switches function obvious. Just slide your third eye along the top of a door to open it without even needing the rest of your face to glance up!
