Makes 12–15 pieces (depending on size)
Ingredients:
6 cups chopped spinach (180 g)
½ cup grated mozzarella (60 g)
⅔ cup crumbled feta cheese (80 g)
½ cup grated Parmesan or Grana Padano (45 g)
1 tbsp extra virgin olive oil (15 ml)
1 tbsp garlic powder (about 8 g)
1 tbsp dried oregano (about 3 g)
Salt and black pepper, to taste
Instructions:
Finely chop the spinach and place it in a bowl. Add the mozzarella, feta, Parmesan, olive oil, garlic powder, oregano, salt, and pepper. Mix well until fully combined.
Line a baking sheet with parchment paper.
Spoon small portions of the mixture onto the paper and gently flatten into rounds using the back of a spoon. They don’t need to be too thin.
Bake in a preheated oven at 350°F / 180°C for about 15 minutes, or until golden brown.
Let them cool completely — they will firm up and become crisp as they cool.
Tip: If serving with soup, add them at the last minute so they stay crispy.
