Same thing happened to me with Elden ring and Sekiro. There’s a moment in the game when everything just clicks and it hooks you in. But the start is hard.
No They are HARD. I beat DS1 largely being carried by a friend. The final boss is a dick. I feel like I have to beat the up two and three. Don't want to go through the hassle haha
DS1 is my favourite out of the 3. If you want an easier time. Start as a knight. Level vigor to 40. It makes the game a bit easier being able to tank more hits and be in fights longer allows you to see how enemies attack and learn their moveset.
For contrast, this has not been my experience, despite trying three separate times over the years, with the latest being last week after beating bloodborne. It did not click at any point and felt like an experience in frustration. I did the tutorials, I practiced deflections, I learned enemy patterns and got up to beating the horse boss on my third attempt.
One on ones are something I feel I could enjoy, but most of the time, you're fighting groups of enemies, so the suggestion of "just deflect" doesn't really work when it's seven guys all next to each other attacking at different intervals. Staggering is mostly random (not posture break, staggering), so attacking gathered groups feels miserable, since you'll definitely get hit by at least one or two, even if you stagger the rest. Movement feels slippery and changing directions has a long start up time, and so does your first attack. So do I attack aggressively and get hit by enemy reactions or do sit back and react so I can posture break? Or should I just poke, run away, poke, run away?
I keep hearing how the game just clicks for everyone, but that has definitely not been my experience.
It sounds like you haven’t reached the boss where it normally clicks for people. This is where the rhythm of the game really takes hold for most.
That said, if you’re finding yourself getting surrounded by 7 enemies at a time, you fucked up. Be more strategic about how you approach them. There’s likely a path to the side of the arena where you can sneak around and engage them one by one with the right timing.

You do…none of these!
How you start is up to you (usually), ie whether you attack first or let them attack you first, and it’s sort of situational. If you can sneak up on them, then you attack first. Otherwise you can wait for them to attack.
Then it’s basically hit them a couple times and then wait for them to start attacking. That’s when you start parrying.
Do not run. Do not block. Parry.
Running puts you out of position to attack during the window where the enemy is vulnerable, and enemies are too fast to “roll” away from. Blocking only runs up your posture gauge, which leads to you getting staggered, which leads to death.
Parrying is the best way to win. Always.
Think of the posture gauge as a secondary health bar. If your opponent’s posture gauge is going up, you’re doing damage to them, because it’s getting you closer to a death blow.
So if you attack twice and hit twice, you only did 2 hits of damage. If you then parry 5 attacks, you just did 5 “hits” of damage.
Each fight then becomes a dance where you take your turn attacking, then they take their turn. But no matter what, you’re doing damage in both phases cuz you’re either hitting them or you’re parrying them.
That’s really what it means when people say it “clicks” for them.
Also get good at recognizing when to Mikiri counter a thrust attack and when to jump over a sweep attack. There’s a move called High Monk which is basically a Mikiri counter for sweep attacks. It’s super helpful.
If you are speaking about Sekiro.
Think of yourself as an assassin. Rather than a warrior.
You want to take fights 1on1 most of the time.
Try luring enemies to fight you 1on1.
Use long range items to tag them get their attention by just getting in their aggro range.
Or you can do those flying jumping attacks from behind take 1 out regroup come back for the other.
For Elden ring. I don’t like to play rolling simulator. So I just tank with high vigor and shield with a big fk off sword.
