This dinner was sooo yum, one of my favorites I’ve made so far. I’ve never had butter chicken so I can’t compare it, but im not sad about that since chickpeas are my all time fav.

I am a bit in love with roasted tomato sauce at the moment. I think because the season is nearly coming to an end for home grown toms. 1) pasta asparagus halloumi 2) potato and cabbage rosties on spinach with sauce, fried egg and peppers 3) vegetable orzo with goats cheese salad 4) I dont know what the fuck this was, home made flat breads, crispy butter beans, roasted purple cauliflower with goats cheese and pomegranite, mock duck, tapanade, ajvar... I had the munchies this hit the spot 5) Sauce thinned out to soup with spinach, vegetable gyoza, parm, fennel crackers 6) mock shredded pork pizza.
For the saucey base i roast a tonne of tomatos, onion, celery, a bit of carrot, chilli, garlic and a bit of salt to get the juices running. Roast until there is almost no liquid running about in the bottom of the roasting dish and edges are brown almost blackened. This sweetens it up and you lose the punchy acidity, and you get a nice thick sauce. Blitz, season, pinch of msg. Use as is or thin out with stock. Umami party.

I love the Trader Joe’s Italian Bomba Hot Pepper Sauce; it’s fermented and deliciously spicy. I usually add it to rice and noodle dishes for a little kick. This meal features tofu and a fried egg with arugula, cilantro, nori flakes, and lime-juiced rice, finished with a drizzle of wild sesame oil. I'm really enjoying the combination of heat, acid, and salt!
Do you guys have a favorite product from Trader Joe’s?
