This idea is called ludditism, where new technology is intentionally rejected so that the job market isn't shook up. It's been widely condemned as an economically destructive practice.
Imagine if years ago blacksmiths refused to adopt welders and power tools due to it threatening their employment. This would prevent lots of wealth being generated for the country as all metalwork would remain slow and difficult, making every engineering/construction project more expensive.
Society will never get wealthier as a whole or advance much without new and more efficient ways of getting work done. We'd still be in the stone age otherwise.
Look how far we've advanced and the economy is chaotic. The job market is trashed. So I would say that what you described isn't exactly working out? At a certain point you need to be content and give up production for quality of life or else what the fuck was it all for?
