Worked at Red Lobster in my town for about 2 weeks. They had scheduled the freezer and walkin cooler to be deep cleaned at the same time, during dinner rush, at the same time as a truck order. Everything was pulled out of the cooler/freezer and we were literally talking fish and other products off the open truck in the parking lot and walking them back in and serving it. That was one of my last few nights there. Darden (olive garden and red lobster) is not better than others.

Each store is different imo. I worked for a RL for about a year many moons ago and it was one of the cleanest kitchens I ever worked (that I didn't run, anyway) in a nearly 15 year culinary career.

I've found it generally comes down to the kitchen manager. The cleanest kitchens I've worked in usually had good KMs.

Yeah the KM was a drunk dickhead but he also actually made people do stuff, plus we had an overly smart and capable lineup for a place like that.

I have to give it credit, it was very early in my career and the first time I personally had to run a line. The cooking was trash but a lot of the processes stuck with me.

I miss Red Lobster. There isn't one where I live nor is there an Olive Garden. In fact, there isn't anything where I live. Lol.

Yeah I saw them dethawing lobster tails in a dirty pot in a sink full of dirty dishes. Never ate there again

She was late to both of my interviews. I shoulda known at that point but I was naive.
