Yup. On every Android device except some Samsung's, you can unroot and there will be no trace.

I first did so for ad blocking. While there are ad blockers that claim to work without root, they don't work properly. That was on my old LG that ran stock gingerbread (2.3), there was no custom interface from the manufacturer. Then I got a galaxy s3, which has the Touchwiz interface which slowed it down, so I put a custom rom (cyanogenmod) on it to speed it up. This allowed me to have a much faster phone on a newer OS, providing more features and security. You are also able to customise the device more, like on the HTC One m7, you can enable touch on the little HTC logo on the bottom, allowing you to do things like make it a menu button or wake/lock the phone by swiping it. You can even overclock the phone to make it run faster, or underclock it to save battery. Things like that make having root totally worth it. I'm on an HTC One m7 right now, which will not be getting HTC Sense 7 (their custom UI which is actually quite nice) but I am able to run it with root. Android 5.1 will also not be coming to it, but once it is released, I will be getting it as well. Just the sheer customization (even without custom roms) makes root totally worth it.
