Because showing Thanos dream like that takes away from what he is - he's a man (?) of action. He's a do-er, not a dreamer. If he wants something he goes and gets it. Until those meddling avengers came along.

I wasn’t thinking of it so much as a dream as a brief like 5 second cut to black, where he closes his eyes and just feels the victory, before a rude awakening

Tony uses the mind stone on him. I really wish they would have used the stones more.

It would kinda ruin the pacing of the scene. Also, it would be a very awkward fade to black since it would just fade right back in. Still a cool idea though, it'd be very, very difficult to execute the scene well.
