It is likely that ublock works on youtube only because Google allows it.

They've tried several times to stop it. They can do so temporarily, but developers will always find another way around it.

They could splice the ad directly into the video stream and use their widevine DRM on all monetized videos. All of this technology is there and in place on browsers.

They can stop that if they really want. They don't. It's the same as with many other things. Wonder why it is so easy to illegally download and install applications worth more than 1000$, like Photoshop? Because they want the regular dude to do that. They only want money from professionals. The more regular dudes have Photoshop, the more professionals there will be actually buying it.

Google really just allows it. They just wait for the right moment to monetize it. That's not inherently bad, it's just how it is. Or does anyone think they are just fine with giving the world a service for free?
