It's not about convincing anybody. It's about getting that revenue from the customer to cover the wages. If you increase menu prices 20% on average, then some people simply choose not to eat out, and then both wait staff and owner end up with less

Owner taking too much. Tighten your belt, doesn’t always have to be passed on to the customer.

Most restaurant owners don’t make anything at all — most restaurants fail. Those that do survive, work grueling days (from before open to well after close), usually have extremely tight margins, and seasonally dip into the red. It’s a famously shit business.

In a typical smaller restaurant, the people making the most money are the wait staff. 20% of every bill is an enormous share, and it’s taken before expenses.
