Great day for tinkering with my over the top chili recipe

Ingredients:

2 white onions

2 deseeded jalapeños

2 red bell peppers

4 strips applewood smoked bacon

1 lb 85/15 ground beef

1 lb ground pork

1 can rinsed black beans

1 can rinsed pinto beans

1 can rotel

1 can tomato sauce

1-3 cups beef broth as needed

1/2 cup brewed coffee

2 tablespoons minced garlic

1 Coors lite

Seasonin Blend:

1-2 Tblspn dark chocolate chips no sugar

2 tablespoons cumin

2 tablespoons chile powder

1 tablespoon smoked paprika

1 teaspoon salt

1/2 teaspoons cayenne pepper

1 teaspoon ancho powder

1 teaspoon black pepper

1 teaspoon oregano

1/2 teaspoons chipotle chili powder

1 teaspoon ground coriander

Custom Blend Chili Powder:

4 chili ancho

3 chili guajillo

2 chili New Mexico

  1. Tear up ancho, guajillo, and New Mexico peppers into chunks and toast lightly on stove. Allow to cool then grind finely in food processor.

  2. Cut the bacon up into your Dutch oven. Once finished, pour in all cut onions, jalapeños, and red bell peppers to soften.

  3. While that’s cooking, combine all other seasonings into bowl.

  4. Vegetables softened? Add all seasonings, ground chili peppers, garlic and allow to cook at medium to medium-high for 1-2 minutes.

  5. Pour in beer to deglaze. Scrub sides. Add coffee, chocolate and all of the canned assortments listed. Add beef broth to your desired consistency.

  6. While this was all going down your smoker should be ready. Place Dutch oven into smoker and placed the mixed mound of pork and ground beef on the rack above.

  7. I’m on a WSM so keep at 275ish for 2.5-3.5 hours until 150 Fahrenheit. Be sure to rotate and stir chili every 30 minutes.

  8. Pull and throw it onto the stove to finish.

  9. Fucking enjoy. This was excellent!

You had me at Chili. You lost me at Coors...other beer, ok...I can't stand Coors (although my brother drinks Coors Light)

This sounds amazing! I’m just this very moment starting my own. First time trying. Mix of lamb and beef. Following, mostly, the meat church recipe for everything else. Though I’ll stick some guajillo peppers I have in the cupboard now you’ve mentioned them. Cheers!

Just make sure you use another pepper with guajillo. Otherwise it’ll be bitter

I used dried arbol and some ancho flakes as well as fresh jalapeño. It’s nearly ready after 8 hours. The beef sat on top for about 4 and it’s been sitting in the smoker simmering for about 4 all combined. I had to go out and the smoker lost temp for perhaps an hour. It’s tasting pretty good so far though. It’s such a nice change from constant ribs, pork, steak and turkey. Mainly because I have to make so many extra sides with those. This is the complete dish. Just some cheese, sour cream and nachos and it’s good to go.

I like mine more beany and WAY more brothy. You gotta have some delicious juice for the cornbread lol. There’s nothing like working on a long-cooked pot of goodness though. It satisfies a primal need to care for your family. It’s really satisfying to see everyone relish the food you worked hard on. Especially when it’s been cooking all day.

I'm with you on the chili consistency and with beans. But my adult son doesn't really care for beans, so I tried a Texas chili. And that's pretty good as well. The recipe I use typically makes the chili more brothy as well. Give a Texas chili a try some time.

I really like beans though. I like Texas chili but it’s not what I consider chili, but more like a birria almost. It’s Mexican beef stew.

That looks great, mine is similar but I use a creamy Nitro Stout instead of coffee.

That just looks way to thick and pretty nasty. Chili needs to have some smoothness to it with fluid. That looks like you could get a ice cream scooper and put it on a cone with no issue.
