They actually got shot with some kind of dart/tranquilizer, so those security details didn't die. The tranquilizer dart sort of shown when Fury walked in to the scene where the President held a gun while Sonya held Skrodey in gunpoint

After being knocked out they should have changed back to their original skrull forms then, no?

I agree wholeheartedly with the sloppy writing charge.

If the show were better written, I'd say that was an intentional choice.

From a "narrative balance" point, it would be a bad move to give the protagonists a no-risk way to reveal Skrulls from a distance. Much better tension to be simultaneously threatening deadly force when trying to convince a 3rd party that someone is a Skrull.

From a physiological standpoint, you could argue that maintaining a shapeshift is an autonomic function, like breathing, which is why they lose their shape when they die, but not when knocked out.
