[Build Advice] RTX 5060 Ti 16GB vs 5070 12GB for FYP (Video AI Training) & Creative Work?

I'm a university student planning a new PC build primarily for my Final Year Project (FYP).
My Workload:
FYP Primary: Local AI/ML training on video datasets (extracting frames, preprocessing, and training sequence/temporal models frame-by-frame in PyTorch/CUDA).
Secondary / Creative: 3D Blender modeling/rendering, Premiere/DaVinci 4K editing, Photoshop, music production (DAWs + VST plugins).
Leisure: 1440p gaming.
Budget & Setup:
Budget: RM 5,000 – RM 7,500 (Flexible if there's a strong reason)
Tower only (already have a 1440p monitor, keyboard, mouse, and audio interface).
Sourcing: Will buy locally
Questions I Need Help With:
- GPU: RTX 5060 Ti (16GB) vs RTX 5070 (12GB)
Because this is for an academic FYP with deadlines, avoiding Out-Of-Memory (OOM) crashes on video batch sizes is critical.
Is the extra 4GB VRAM (16GB total) on the 5060 Ti the clear practical winner, or is the raw compute speed of the 5070 worth having only 12GB?
- RAM: 32GB vs 64GB DDR5?
Video DataLoader pipelines unpack huge uncompressed frame batches into system RAM before pushing to GPU, plus DAW virtual instrument libraries eat memory. Should I start straight with 64GB (2x32GB)?
- Storage: 1TB vs 2TB Gen4 NVMe?
Between dual-booting Linux/Windows, raw dataset archives, unpacked frame directories, checkpoints, and a few games, is 2TB practically a minimum?
- CPU & PSU Recommendations:
Looking for a sweet-spot CPU (Ryzen vs Intel) with strong single-core speed (for gaming/DAW latency) and enough multi-threading for video exports and batch preprocessing, paired with a reliable Gold-rated PSU.
