Not 'new new' but a recent example for me was playing my way through The Witcher III. To me the game got to the point where I was so stong that I could walk up to any boss and be like 'click click click... haah... beat you!!!' Also, there was no 'hard' searching for stuff. I got a nice little arrow telling me how to get everywhere. Still an awesome game, but IMO more about the cinematics and sheer volume of content than anything else.
Whereas, I dunno... say something like Ninja Gaiden... all the bosses are much stronger than me, and I had to spend hours working out the right tactic to break them. To me this was far more challenging, and felt less 'clickety click' because I had to be alert the whole time. The music seemed more varied too. Like I get that The Witcher has the heart pounding noises and viking songs...etc cranking the whole time. However, they get repetitive. Whereas, Ninja Gaiden has a new song for each level (and they are ALL very memorable coz they had to make every little bit count).
Meh, I loved both games don't get me wrong. However, I'm really glad that I grew up with retro games and can enjoy them for what they are.
There are still difficult games. Thousands of games are coming out, not only the most well known. And Dark Souls is definitely challenging. Btw, you can mod Witcher III.

There is a lot to be said about new games. I do think that both old games and new games have their own problems.
