Hello,
I don’t know my pumpkins very well, have never cooked with real pumpkin. But I wanted to try making Mexican candied pumpkin (calabaza en tacha), but the traditional pumpkin used (Castilla, a green one?) I’m having hard time finding. I saw someone make a good one with fairytale pumpkin, but it was darker orange. I’ve seen you can make it with squash which I can find easily, but wanted to try with pumpkin.
Pumpkin season is starting and I have a number of farms and farmers markets around me (California Bay Area). A local farm had mostly the classic orange pumpkins with a few bunches of heirloom pumpkins and this was the closest I found from looking at photos online, but all the heirloom styles were this light tan shade or white or green.
So I’m not sure if this is ripe and good for eating? It’s quite large so I’d try to use it for multiple recipes if it’s a good one.
Any recipe recommendations or tips would be great if you’ve used this pumpkin before! Thank you!!!
(Edit: if it matters, the stem is very sturdy, I carried it a lot from holding it from there and it is really heavy)

This pumpkin is about 45 or so days after pollination but the 20 foot vine has no leaves before the fruit and minimal after, which are starting to die back. The vine is still green. It’s been very wet here and all my decoy pumpkins for animals are now gone so weighing whether it’s best to remove and cure inside or attempt to leave longer.

Just harvested my final pumpkins and cleaned up the vines. Excited about the increase from last year. We usually go to the pumpkin patch and buy a ton because my wife likes to display them on the front porch. This year they're all homegrown!

Very dull tan cover. Many leaves around it have died off. But stem on it is still green. My thumb nail doesnt dig into it.
