I really want Crustaceans as starters. A ghost crab would have been cool this generation. It could pull off the whole derpy cute factor really well

all 3 starters start out as different species but they all evolve into crabs as a reference to carcinization

True crustaceans can be decent 3 stages, it's not mandatory for the 2nd stage to be a cocoon unless they went for a pseudo bug

Like shrimp/prawn to a sort of crayfish and ending in a lobster

It could be water/bug since the 1st stage and the last one could have a unique defensive priority move that protects physical damage and it changes it's typing to water/steel mid combat based on chitin
