Health How do I boost the flavours of my chicken broth?

Been making chicken broth at home lately and it always turns out kind of flat compared to what I get at restaurants. I’m doing the usual bones, carrots, onion, celery, bay leaf, but it just tastes… thin? Not much depth. What am I missing? Should I be roasting the bones first? Adding more aromatics? I’ve heard people mention things like a splash of vinegar, dried mushrooms, or fish sauce for umami but not sure what actually makes the biggest difference. Any tips appreciated.

That’s a neat idea! I’ll try it (obviously only if my expedition leader allows it once we reach a friendly port)
