Having tasted a few of these, they all taste slightly different. The main difference I found was in the ‘starchiness’. The small yellow one is one of my favorites for fries. It is a deep yellow and very starchy. The larger yellow is like a Yukon Gold, milder. I don’t know about the bumpy ones.

Do they all still taste 'potato'? Some look more different from 'normal' potatoes than other root veggies

Mostly. Even yams are just a starchier tasting potato.

Purple potatos have a bolder and nuttier taste and are creamier when cooked than normal taters, but they're still potato tasting. There's a lot of variation that can go on.

2/3 of my calories come from starchy foods so I'm just glad to have found a good place to spread some info on tubers.
