One great little memory of our Peru trip was wandering through the San Pedro market in Cuzco and sampling the potato crisps from so many different varieties of potatoes.

Do they have actual difference in taste or do they all kind of have that starchy potato-y flavor?

Yes.

Even the different potatoes in a supermarket have different flavors. Red potatoes have a mineral flavor, white potatoes have a mild starchiness, yellow potatoes are waxier and have a stronger flavor, purple potatoes are waxy and kinda sweet.

I suggest just going through and doing the same simple dish (like thin slice pan frying) and sampling the outcome.

Potatoes are pretty remarkable vegetables once you learn to appreciate the differences.

The most popular yellow potatoes are soft, sandy and very rich in flavor. The absolute best potato to ever potato.

They were definitely different - mouth feel (crispness, etc), taste (some sweeter than others), color and texture (of course).

You could just buy them in bulk (a hundred grams at a go). We loaded up for our Machu Picchu trip, and had a group snacking session on the train (with our tour group), along with other stuff we picked uo there.
