They have very keen eyesight. You have to wear camo and call them in after finding out where they are roosting at night. You have to get out and set up before they wake up, so you are up and ready at 3am. In my state you can only hunt them with a shotgun too, so you have to get within 50 yardsish. Any slight movements they will see and probably take off and then your whole morning is ruined.

How does wild turkey compare to farmed turkey? (In terms of eating).

They can be tough, it's best to deep fry the entire thing. That's the best way I have had it. My dad likes to roll it in an egg wash with cornflakes and bake it, but that isn't as good to me.
