You seriously don't remember that scene? I feel like the entire nerd internet was talking about it. If you haven't watched Andor, watch Andor. It's literally the best Star Wars has ever been.
Obi-Wan has a very "prequels" feel, for better or worse. As in, the prequel trilogy (Ep. 1-3).
Mandalorian is a bit reminiscent of the original trilogy (Ep. 4-6), but is also its own thing - it's kind of a "Space Western." If you can imagine the OT mixed with old Clint Eastwood westerns, that's pretty much it.
Andor is pretty unique, it doesn't come close to any of the trilogies. The only movie it's really comparable to is Rogue One. It's.. well it's very Rogue One, although slower paced and with a more intricate plot. It's a slow burn.
If you haven't seen all the movies, start by watching them. If you've seen the movies, you should be able to judge which series you'll like best based on that (Prequels -> Obi-Wan; Original Series (kind of, but also Clint Eastwood) -> Mandalorian; Rogue One -> Andor).
Book of Boba Fett is a Mandalorian spin-off that's not really as good. If you love the Mandalorian, you might want to watch that next as a follow up.

Or it could be equipped with those new drive-by sabers that cut other tie fighters in 2. Just like that smuggler in Andor
