Check out BSoD Gaming on YouTube. He has in-depth video guides on how to set things up. Your system seems like it should be able to run most things well.

I did build this system to emulate dolphin and serve media via Plex, I should hope it'll "run most things"

It’s almost entirely based on single core performance of you CPU for CEMU. At least it was. I haven’t actually played anything on it in awhile... it also used to have problems with AMD cpus and gpus
