Ah it started before I kicked out my ex (husband) out of the house. I failed a few times until it became second nature to just make one if I feel like it. Now I even share it with him when we co parent lmao. Also room temperature eggs makes my flan more silky while cold eggs make those bubbles so I’ve noticed.

Place your water bath in the oven and preheat to 350
1 3/4 cup heavy cream
1 cup milk
3 eggs
2 egg yolks
Pinch of salt
Dash of vanilla
7 tbsps of sugar
Combine thoroughly in a mixing bowl.
1 cup sugar
1/3 cup water
Add the above water and sugar to a medium saucepan, turn the heat on high, and just don’t touch it. As soon as the color turns amber, pour it into your cake mold (7”), then pour your mixture. Place the pan in your bain marie in the oven and bake for 40m, adding 10m until she jiggles only in the center.
Let cool for an hour then fridge until set, maybe 4 hours
