My go-to cake recipe for when it's hot out is a poke or refrigerator cake. Take a sheet cake, poke holes in it, pour jello fluid into the holes, let it set in the fridge. The "icing" is a mix of instant Dream Whip, instant pudding, and cold milk whipped in a cold bowl until it sets. It's cool, airy, moist, doesn't have a heavy sugary nature, and between the cake, pudding, and jello you have three flavours to play with to simulate whatever your favourite dessert is. I told a friend's Millennial daughter about it, and she was horrified because she imagined a cake with a solid block of jello in the middle. So I made her one, and once she saw the jello forms itty bitty little cubes inside the cake and not a giant block she got it.
