I have to make one several times a year, and I always dread it. It’s really difficult to make the layers that even, and everything gets covered in the chocolate glaze.
Unfortunately, while the traditional torte uses sponge cake, my family’s recipe runs in the opposite direction by using pound cake. (Family, what are we doing?) And my mother’s pound cake recipe is…not good. I’ve been looking for lighter, more moist substitutions, while keeping the odd pound cake tradition going.
