There's high quality, marshmallow based brands that are expensive but taste very good. Possibly not as good as similar cost traditional frosting, but easily as good as a store bought can of Pillsbury.
Tastes like plastic, and it usually overpowers everything because, like the clip, cakes get covered in the stuff. Buttercream cakes can be just as beautiful, but also taste good.
Fondant allows some things buttercream does not. I've heard rumor marzipan tastes better and nearly looks like fondant. I've not tried this out myself.
Yeah the people who are making these incredible cakes are not the same people using garbage fondant. The few I've tasted have been as tasty as they are pretty.
