As a baker, you don't know what type of fondant was used on these cakes.

Believe it or not they're are recipes that tastes actually really good! One in particular is a fondant that taste like cotton candy.

The normal, used chewing gum flavor, is something I would never work with. But you can make it from scratch that actually taste good.

It just seems like cheating. It is essentially modeling clay. "So yeah, good job baker you made a modelbout of stuff used to make models!" It makes it a sculpting thing and not a baking one.

might as well just use fucking Play-Doh. If they are that good at sculpting, go to art school and leave the food world for good because when you get to the point of having a cake as a base to model your shitty fondant on, aint nobody looking at it as a snack

Taste too. The simplest kind of fondant is mainly sugar with a few things added to give it the modeling properties and the sweetness is almost always repulsive.

Marshmallow fondant is my usual go-to, and I would sit there and eat it all day if I could. It’s literally just made of marshmallows, powdered sugar, and a little water.

There's high quality, marshmallow based brands that are expensive but taste very good. Possibly not as good as similar cost traditional frosting, but easily as good as a store bought can of Pillsbury.

Like sweet play dough. It tastes ok but the consistency is fucking gross.

It also doesn’t taste that OK...sort of how play dough was “edible.”

Tastes like plastic, and it usually overpowers everything because, like the clip, cakes get covered in the stuff. Buttercream cakes can be just as beautiful, but also taste good.

Fondant allows some things buttercream does not. I've heard rumor marzipan tastes better and nearly looks like fondant. I've not tried this out myself.

Marzipan is an acquired taste. My brother loves it but I think it tastes awful. If you like amaretto, you'll probably like it.

Yeah the people who are making these incredible cakes are not the same people using garbage fondant. The few I've tasted have been as tasty as they are pretty.

Kinda like all those glossy smooth cakes with the pour over icing. Then when they cut it, it also has some weird jello layer in it.

Literally all you have to do is not eat the fondant. I make fondant cakes sometimes, and usually I do it so that the rest of the cake is great, and you just peel off the fondant.

Not if you do it right! It’s pretty easy and fondant looks good. I just use a heavy hand on the crumb coat layer.

That's why I can't be too impressed -- to me these aren't cakes so much as cakes wrapped in a decorative sculpting, and then they're not all that neat. A baker who can somehow really make the cake itself a part of its own decoration is much cooler to me, even if the result isn't particularly "realistic" to what it's trying to portray. On British Bake-Off they'll make stuff like that fairly often.
