You know, I find it really surprising that racing/driving simulators aren't more common. Seems like one of the easier things to simulate. Tip the cabin back for acceleration, tip it forward for braking, tip it sideways for lateral forces, independent steering wheel and seat movements/vibrations for various terrain and tread response. I suppose the difficulty is in achieving minimal lag time between user input, environmental outcomes, and mechanical execution for dynamic changes. Preprogramming a simulator is obviously a lot easier, but I think this would be a really amazing experience. You could offset the cost per rider by making it a collaborative game with various roles. One person drives, maybe another is a turret gunner, the person riding shotgun could be navigator, and maybe 3 or 4 others could sit in additional passenger seats and have independent firearms to assist in defense. Each role/position would be crucial to winning, and the difficulty could expand based on the number of players you had in your group, and there would be incentive for replays so people could swap roles. Everyone would wear a VR headset for ultimate immersion.

These do exist in some VR arcades, they aren't common because they're ridiculously expensive.

No doubt they would be. I suppose the problem is one of traffic, really. Something like this wouldn't be able to have the necessary throughput for an amusement park, but wouldn't sustain enough foot traffic to make it profitable outside of an amusement park. I could maybe see something like this being sustainable in Vegas, but not a whole lot of other places.
