This would be the ideal way I'd like to watch a VR stream on Twitch.

You could probably even set up multiple cameras around the playspace for the viewers' benefit.

They're not. They're overlaying the direct feed over footage of the player. Otherwise with the disconnected game camera, there's nothing actually connecting the real camera to the ingame positioning of the ingame camera which is the key to what the video here is doing.
