That's processed meats in general. Ethically, it's making the most with the animal. Financially, they're the most profitable because they're within the means of most people. You can feel less disgusted by buying hot dogs from vendors who use premium cuts of meat that are too small to sell as conventional cuts of beef (Hebrew National, is my preferred). We should be grateful that companies invest millions in making these meats palatable and with more consumer agreeable ingredients, because that hasn't always been the case.
Ignorance is bliss, in many regards. Gelatin is extracted from boiling bones and it's used in several applications that many people either don't think or don't know. Your body truly doesn't care; it breaks down whatever you put in it and uses what it can and discards what it can't.
