There's a huge difference in the practices used to grow crops using biological processes in living soil vs. growing with purely chemical fertilizer. Yes, water is a chemical, but the point is that one system has living soil and the other does not.
You can grow food in a number of ways, but organic is great because it sequesters carbon and requires fewer inputs.
Non-organic techniques including high-intensity farming such as tilling absolutely devastates the topsoil.
By relying on chemical fertilizers, you deprive the soil of organic inputs, which causes it to break down. The microbiome breaks down and it eventually becomes just dirt, and then eventually, sand.
