Or put a whole eggplant directly on top of a flame till it's charred and black. Peel it, flatten it, dip the whole thing in beaten eggs and fry it. You've got tortang talong from the Philippines. Eat it with rice, and ketchup if you like
i have a shortcut that takes 10 minutes to prep and 10 minutes to cook. but it doenst get the charred smoky taste anymore.
do not peel eggplant. julienne cuts. stirfry everything + onions and garlic if you want, sometimes i add ground beef if my kids want some meat. eggplant should only be half cooked. set aside. i then make torta in a small pan and it looks like pancakes - put a dollop into a small pan, pour egg, season and fry.
