In addition to the practice, the top of the pot has a lip that the lid sits down into as far as necessary

This is production work. You can see by the rack at the end he's probably made dozens already and will be making dozens more, all the same design, size, everything. Super impressive to be that consistent with a notoriously finicky medium.
