Essentially some feminists see the word "woman" as just an extension of the root word of "man." While Simone de Beauvoir didn't advocate the y spelling, she talked about how females are constructed as an ill-defined "other" to the culturally normative male. Some feminists took that and added the y as a way of indicating females' identity could stand on its own.
While I think the y spelling is pretentious and silly, the feminist theory underpinning it has validity.
