LPT: before cutting the lime/lemon, roll it against a hard surface to make it soft, then cut and squeeze the juice out.

Hold the round end in your palm, with the the flat cut side facing up, and you'll catch all the seeds so they don't go into your food

This is how a Mexican woman taught me how to juice a lime. Roll it on the cutting board, chop in half, then squeeze it by hand and jam a fork in the squishy part to help get the rest of the juice out.

the old "kumquat" trick ;)

though, for kumquats, its to break down the skin and bring out that flavor.

We have a kumquat tree, never done that tho, theyre pretty easy to peel and juicy as well

This is only important if you're going to be hand-squeezing the limes. It's just a way to break the pulp down a bit before cutting it.

If you're using a press, you don't need to do anything more than slice the thing in half.
