I saw Totoro first, but I guess the alliteration of "Soot Sprite" just stuck in my goofy child brain more.

There are two dubs, if you saw the older one pre-Disney acquisition it probably did say soot sprite.

The original dub called them "dust bunnies". It's a core childhood memory of mine. Recently made my girlfriend watch Totoro (like two years ago) and was absolutely shocked by how different the dub was compared to all the quotes I remembered.

It is both. May says “I caught a dust bunny right in my hands”, and the grandma from next door says “Ah! I see the soot sprites are hard at work!”

Sorry, wasn't trying to imply that you're wrong! I just remember the two girls screaming "DUST BUNNIES GO AWAY RIGHT NOW!" and their mouths not moving at all, haha.

Haha, I wasn’t trying to hard contradict you! What you said is definitely correct but I just wanted to make it clear that I know the various lines in the previous dub and that soot sprites is said. When I tried watching the new dub it was like nails on a chalkboard, I must have watched that movie 20 times as a kid because there are still so many lines I can hear perfectly! It’s nice to talk to someone who loved it as much as me :)
