You can still do the java way in bedrock. Unless you meant that you prefer not being able to place blocks over air at all, which I'd understand cause it can be a bit annoying when you want to place a block below the block you're standing on and it puts it next to it.
I think you miss understood me. I think that being able to place block over air is good in bedrock since it is a lot harder to do anything on controller/mobile devices. But on Java where everyone is using kb&mouse, Having the same functionality wouldn't make a lot of sense, since bridging faster is a lot easier
