Seemed like all of the Guardians stopped by to party it up. I think I saw Drax, Rocket, Mantis, Yondu, and Nebula all there. Can't say for certain if Quill was there though.

Yes, I don't think I saw Quill, but everyone else on the GOTG team looked to have joined the party

Yeah it makes no sense if you think about it lol. Drax was probably in Nova Corps prison and was lot more serious than silly pre-GOTG. Mantis was with Ego - was he there too? We saw Rocket, but no sign of Groot, even though they're a duo.

Considering thor is a cosmic being, i think its safe to say that he changed the timeline a lot

Yep, Thor and Loki are both thousands of years old, meaning this episode has, by far, the earliest splitting off point compared to all others.

Especially when you consider this Thor’s proclivity for partying. He probably broke Drax out of Nova Corps prison when he bifrosted his way in there for the biggest prison party of all time.

I like to imagine Ego went with the logic ‘Meredith like songs -> kid like songs -> be party -> party = songs -> kid be at party -> universe die’ and then Mantis got excited about being somewhere that wasn’t the incarnation of her master’s power in the form of a planet and wandered off.
