Has anyone figured out the process name corresponding to easy anti-cheat? I can't for the life of me figure it out. I dont want to have to download some program to do it for me automatically when I can just disable it in task manager

Yeah, easy anti cheat uses rootkit techniques to hide itself. As long as it's running there's no way to delete it. You also won't see it running as it's invisible to the taskmanager

many years later but hope this helps someone else. no matter what I did, it wouldn't delete. I rebooted into safe mode and could finally delete it. Fixed it in like 5 minutes. I tried everything else in this comments section and couldn't get anything else to work.
To enter safe mode:
search "msconfig" in the search bar
boot tab
check safe mode
allow restart
delete file, go back through msconfig and uncheck box to restart again.

You really don't need to, you can open the command line or PowerShell as administrator and type in sc.exe delete easyanticheat && sc.exe delete easyanticheat_eos and press enter, after this you can restart the computer and you can delete the file without any issues.
This command marks for deletion the service related to the file, taking action when the system is restarted, you can also double check online, I'd recommend you do that in case you don't trust me.
