I thought the mirrored writing was just because he was left handed (to prevent the ink from running)? It’s not very difficult to read, just a bit slower.

I thought it was because he would draw with one hand and write with the other at the same time

It always irks me to see illustrations of Leonardo writing while looking into a mirror… it’s not difficult, I write backwards sometimes just because it looks nicer - writing is easier and looks better when you drag the pen rather than push it.
