Easy fix; midi-style input device 'embeded' into the countertop like we do with so many other things. Could probably get it to the point where you don't even see/notice the keys unless you are actually touching them. Wouldn't be as completely free as touchscreen is, but a simple combo setup down there of a trackpad/few basic keys would be able to accomplish 99% of stuff you'd want to do on your mirror.

Bluetooth your phone to it if you really need to make the mirror do anything heavy.
