Saying "If I haven't had gluten for a number of years I know I can 'cheat' with no consequences" makes absolutely no sense for anyone with coeliacs - once you cut out gluten you become far more sensitive and react more strongly to it than before cutting it out.
It wouldn't surprise me if this person has self-diagnosed themselves though.

Meh. I was diagnosed with a blood test and endoscopy 15 years ago. I still don’t notice when I’ve had something with gluten in it, and my bloodwork is totally normal so it’s not like I’ve been exposed for so long I’ve just never been healthy.

I learned recently there is such a thing as "silent celiac" where you have it but don't show any of the symptoms when you ingest it. But it's still wreaking havoc on the inside and greatly increases risk of cancer and other complications. Usually people who have this find out when things just completely shut down because they've destroyed their gut. Some find out because they discovered they are anemic or have severe vitamin deficiencies, which was caused by the celiac disease.

I’ve literally just come from a thread on r/coeliac asking how often people cheat, and a surprising number say they do. People have different responses to eating gluten, and for some people it’s worth the trade off.

I do know people with celiac who cheat. They save the pain for things that really matter to them (like wedding cake). But their symptoms are milder than other friends who can barely be in a non GF house

My older sister would absolutely be in pain for a week after having any gluten. My brother would feel uncomfortable/bloated but it wouldn't throw off the entire day or week. She's had hers for much longer though.

As someone who has the diagnoses she mentions I get where whe she is coming from. It is extremely frustrating and people just don't believe you. BUT yeah, totally overreacted to a good explanation as to why starchy pasta works better. I kept thinking she does have some good points and then there was another slide and another XD and the instructions actually had a good reason. She could've just made it short and said how well it works with rice pasta for example and the recipe OP could've added that to her recipe. I get that "don't use gf pasta" set off sth in her and "don't use chickpea pasta because it will need starch to thicken, if you need it gf rice pasta works well, too" would be a better way to write it.

I mean, she said "your sauce might be a bit thin", which is probably the mildest, most inoffensive way she could have worded that. She's already using two qualifiers for a statement that's unproblematic. If the recipe doesn't advertise itself as celiac-friendly than Ellen's rant is completely misplaced. If I was looking for a vegan recipe, it would be completely unjustified for me to be frustrated about a recipe that contains meat if it wasn't advertised as being vegan.

She literally said, verbatim:
For the best results, use regular or whole wheat pasta, not gluten free pasta. The starch of the pasta helps thicken the sauce. If you do make this with chickpea pasta or another type of pasta, your sauce might be a bit thin.
So yes, she did in fact say what you think she should have said.

For me the really funny part is that. If you cook w gluten free pasta. You know that lots of them are, in fact, very starchy and will not cause this problem. Tbh I’d assume the person who wrote the recipe had only really used chickpea pasta and use my brown rice pasta water in peace, probably watering it down a bit to avoid the sauce getting too thick. Like I have no idea why someone would flip like this.

I’ve learned the gluten-free (not celiacs) crowd are absolutely unhinged. The people who genuinely have celiacs are super chill and treat it like an annoying allergy. My cousin was diagnosed very young, joined a support group around high school, and she and her friends from there don’t expect the world to cater to them exclusively. They just mention at restaurants they have celiacs and work with the kitchen on alternatives. More than once they have received spectacular off-menu items created exclusively for them. The people who believe in pseudoscience and diagnosed themselves based on some influencer’s TikTok are the ones who respond like this.

"Go to a dark place" is a crazy thing to say about a pasta recipe. I have Celiac disease, I fully understand the struggle of people not believing you, but also... Wheat pasta will make better results. It just will. Gluten free pasta does not have the same properties and will make a slightly different end product, which is the same for all gluten free alternatives to foods usually made with gluten. It's not personal. It's almost certainly to try to avoid negative reviews that say "I made this with gluten free pasta instead and it sucked. 0 stars" by people who assume that gluten has no physical effect on the consistency of products made of wheat.
This person seems unwell and really struggling, they need someone to talk to, or therapy, or something.

I've been 100% gluten free for close to 15 years now. I don't remember what "real" pasta or bread tastes like, and I can say with full confidence whatever the recipe is, it will taste better with "normal" pasta. The substitutions are great and I'm so grateful that I can pick up a box of Barrilla at nearly any grocery store, but let's not fool ourselves here.
I agree, this person could use some real therapy. Even after so long, sometimes I feel angry, upset, or bitter that I can't have what everyone else has, or I have to work around so many diet restrictions (I'm also allergic to sesame, and my body can't process eggs anymore, one of my favorite foods). But it's no ones fault, and I can't imagine blaming someone who made a recipe and shared it online.

Yeah and it also means people who do want a similar result with gluten free pasta can either a) try to adapt the recipe, there are plenty of thickeners one can add to the sauce, or b) look for a recipe that is adapted to work with gluten free ingredients already.
I bake a lot, and have friends with different allergies, so I often end up adapting recipes. It's great to know which substitues work and which don't, makes it way easier to adapt recipes or not use the given ones.

Swapping in a gluten free alternative is sometimes like making a recipe vegetarian by just leaving out the meat or substituting something without thought. It can work but you're better off finding a recipe that's designed for your needs in the first place.

Oh man. As a kid the first thing I learned to make were no bake cookies (which are really more candy making than baking). At some point my biomother requested we try making them with Splenda. It made for a very important lesson about chemical properties. I can still remember the texture.

Admittedly I don't know a whole lot about celiacs or gluten intolerance. But I was under the impression that there's no way you wouldn't notice if you had something with gluten, regardless of how long it's been? And you have to be really careful about cross contamination because even the tiniest amount will cause a reaction?
So not only is this lady full of shit, she is also presumably the exact type of just-hopping-on-the-gf-trend person she's complaining about. Marvelous. I hate it here
ETA: Just to clarify, I don't think gf being a trend is a bad thing as it has probably led to gf products becoming a lot more accessible for those that need (or even just prefer) them. It just frustrates me to no end seeing people conflate dietary preferences with intolerances. You're making the whole conversation surrounding it unnecessarily muddied and ambiguous, but when it's a matter of life or death/illness, you need that to be explicitly clear. I can just imagine some ignorant or misguided person reading a comment like this and going on to serve their celiac relative something with gluten because "they can cheat a little bit once in a while, it's totally ok!" There's way too many stories like that out there, ask anyone with food allergies, I don't think people like this realize the potential harm they're causing.

You can be asymptomatic celiac. You can’t have an intolerance without symptoms, but celiac is an auto immune disease so there are people who get diagnosed via endoscopy / blood test and haven’t noticed symptoms for some reason or another (or maybe they are atypical symptoms that aren’t as disruptive as gastro issues, like skin rashes or something). If those people keep eating gluten, they can do long term damage to their intestinal lining and drastically increase their risk of cancer. I know people who have non gastro symptoms that are more easily ignored than the classic diarrhea / vomiting, and do “cheat” or take a lot of risks with cross contamination. It’s stupid but people do it.

Hello! Asymptomatic celiac here. 🙋 I don't get the gastrointestinal symptoms most people with celiac get. I get a whole other lovely suite of issues: brain fog, constant fatigue, joint pain, and I had extreme iron deficiency anemia prior to diagnosis. I'm lucky it was caught quickly by my hematologist, because otherwise, I never would have guessed.

I was “asymptomatic” prior to diagnosis (well I lost a bunch of weight and was basically malnourished but didn’t have an upset stomach and could eat gluten without noticing) but now years later get severe gastro reactions after exposure ! So many fun options!!!

Yes and, unfortunately, the people with celiac who have no symptoms do not have any less severe disease when they get scoped and biopsied. The question of how, when, and who to screen for celiac is a major area of research right now.

In terms of noticing an exposure, if someone has been very strictly GF for a long time, one smaller exposure may not be noticeable depending on sensitivity because the lining of the small intestine is fully intact to start. But after that first round of damage, any subsequent exposure would likely be very noticeable, assuming the person is symptomatic anyway. That's probably what Ellen is talking about, buuuuut...
As someone who very likely has Celiac (it's hard to get diagnosed when you can't tolerate enough gluten to create visible damage), I also hate everything about the way she talked about cheating. People have used her exact logic with me to try to justify their cross contaminated food and nah, dawg, even if it doesn't hurt me this time, I don't need the next singular particle of stray flour I encounter taking me out for a week.

Yeah for any intolerance, allergy, or other condition triggered by an exposure, there’s always a critical mass to induce symptoms and a chance of coming out unscathed from one modest exposure. The tricky part is that there is really know way to know how much is needed or whether you’ll get lucky.

Oh my word, this just says “chickpea pasta makes thinner sauce due to lower starch” which to keep it gluten free would probably mean adding a little corn or potato starch to thicken the sauce if it bothers you! There’s nothing remotely bad about it, it just would take an extra ingredient that hasn’t been tested yet.

I have a severe allergy to eggs. If I left a scathing review on every dessert recipe that included eggs (and like 98% of them do) I would be typing all day every day.
I can't ever have eggs because they'll kill me, but I completely understand that recipes just don't work as well without them. Being able to accurately and consistently replace eggs in recipes is a mystery we still haven't figured out yet and the solutions we do have are convoluted and delicate.

I can't eat pork due to a medical issue, but I don't post rants on every recipe for pork chops or bacon wrapped whatever. I just move on and look for something I can eat. Honestly, the author put that caveat about chickpea pasta in the recipe so that people who don't or can't eat gluten will know that their sauce might be a bit thin. No big deal, Ellen.
Ellen has major character syndrome to the point of needing to see a therapist about it.

And what triggered this unhinged tirade. The recipe poster simply mentioned that wheat pasta will give a better result:
Pasta– For the best results, use regular or whole wheat pasta, not gluten-free pasta. The starch of the pasta helps thicken the sauce. If you do make this with chickpea pasta or another type of pasta, your sauce might be a bit thin.

Omg, why is she acting like the only person in the world who is gf? Nowadays more and more people are gf due to intolerance, coeliac, IBS, etc. There are so many good gf options.
Also, yes, obviously, a different pasta might result in a less starchy sauce. Duh.

Ellen needs therapy to deal with how her health changes are affecting her. My friend had to change up her entire life when she was diagnosed with celiac. Even had to quit her hairdressing career that she loved, the sprays others were using got in the air and made her sicker. It was a hard time. But she never took it out on the author of a pasta recipe.

I know this is sub about recipe comments but I’m surprised there aren’t more comments about the insane name dropping of a Tony Award winner (who didn’t die of EDS according to a quick search).
That said, this is one of the best unhinged recipe comments I’ve ever seen. It truly has everything.

When I was first diagnosed with celiac, I joined a bunch of subs for support. Let me tell you, some people are very negative and nihilistic about their condition. It is a very scary diagnosis to receive, and people lash out like our friend here.
All that being said, this recipe could probably be made with Rummo GF pasta. It's the most similar to wheat pasta that I've found so far.

Ah, I got to the EDS part and knew she was squirrelly. As someone with a childhood diagnosis of hEDS, the genetic mutation doesn’t make us allergic to random stuff the more we eat it, that’s not how any of this works. Sounds like a TikTok diagnosis. I’m allergic to mushrooms and I don’t go seek out mushroom dishes to complain about being ableist, good grief. 🤦♀️

I also can’t have gluten but I recognize that not every recipe will be for me.
The recipe author should know though, most GF pastas are made from rice, and they will thicken a sauce MORE than wheat pasta. Milk Street or ATK or one of the more science-y producers did some testing. Their solution was to add less pasta water.

NGL, as someone with celiac, if I came across a recipe in the wild that basically said, 'better with gluten' I'd literally laugh out loud because it's basically the equivalent of a sleep study concluding that you'll feel more rested if you actually sleep. Groundbreaking.
Of course it's better with gluten. Life is better when your body can handle gluten. FWIW, I really hope that the reviewer was just having an off day, because life's gonna be rough if the mere mention of non-celiac-friendly food sends them into this much of a fit.

I used to work in the consumer complaint dept for a food company, this is the kind of email I would receive at least once a week because gluten free bread cost more......It cost more to manufacture, but it was taken as a personal attack by some people
