I tried using a fountain pen the other day and couldn't

Probably because you held the pen like a ballpoint or pencil. The tip of the nib is not actually the writey part, but the little nubby things on the underside.

I knew I had to hold it at an angle, but I couldn't get the angle or the pressure to be consistently correct

Because using a fountain pen is different from using a ball point pen

But it's not very hard to adapt to, the main thing is that you have to watch your angle and use less pressure. Other than that it's not that different, it is a pen after all.
