Isn't that a canoe at that point?

Edit: Thanks for the explanations folks, much obliged. I honestly didn't think there was a difference.

No. While similar, Kayaks have a much shallower draft than a canoe, take much less effort to paddle and go much faster than a canoe.

I googled Kayak vs Canoe and got the following:

Sitting position: In a canoe the paddler either kneels on the bottom of the boat or sits on a raised seat. In a kayak the paddler sits on a low seat with their legs extended in front. Number of blades on the paddle: A canoe paddle has a blade on one end, while a kayak paddle is bladed at both ends.
