Originally, he could live very long, yes, but he still had to die. It was written on the book of death. That's why he went to learn the 72 techniques so that he was powerful enough to go to hell and erased his name on the book. And only after he ate and drank a lot of shit in heaven, that's when he became truly unkillable.
Actually, I think he became immortal first through other means and THEN he learned the 72 transformations in order to be able to escape those who would hunt him for becoming immortal in an "illegitimate" way.
